Tandoori Chicken

Here comes one more delicacy learnt from my Mother-in-law and our all time favorite dish too -    Tandoori  Chicken . I had my own doubts when my Mother-in-law told me she would make Tandoori Chicken at home. But to my surprise it was the tastiest Tandoori chicken I’ve had in all these years. She learnt this recipe from one of her close Muslim friend when they were in Hyderabad.
My Recipe is not authentic Tandoori  Chicken cooked in the Tandoor but an quiet easy way to prepare at home. I’ve slightly changed my MIL’s recipe and added little spice to the recipe. Since we all love to eat spicy food at home.
At market varieties of the Barbeque grills are available with affordable prices. You can pick one of them for my recipe.
Don’t worry I’ve an alternate idea if you don’t want to buy Barbeque grill to still have yummy Chicken fry.

Gongura Chutney

First thing that strikes in our mind whenever we plan for Andhra Meals is tangy, spicy - Gongura chutney or Pachadi. I’ve seen my friends going mad about Gongura Chutney and completing the entire Meal only with this chutney. This is truly an inseparable part of Andhra meals.

I bet my Mother-in-law makes the best Gongura Chutney I’ve ever had.  A very simple and quick recipe that can easily be stored for a week.  You can choose this chutney as spread for roti, dosa or bread, but the best is to have with hot rice and ghee along with a slice of onion.  Hmmmmmmmmm can’t resist anymore, let’s try this now…………………..

Akki Rotti

Coming to Karnataka cuisine, one can't forget the hot Akki Rotti with Engayi, Bisibelle Baath, Nucchina Onde with Coconut Chutney, Mysore Bonda, Holige with ghee, Gasgase Payasa, Sopina Saaru with Raggi Mudde (Raggi balls), Bassaru and Sopina Palya, how can I forget delicious Masala Dosa with Filter coffee, the list goes on.
Hmmmmmmmmmm, I miss my Mom's cooking so much. She's been our Chief Chef and Cooking consultant for all of us in our Family. Nothing can beat her expertise in cooking for 50+ of us in the family.
Being in Karnataka for more than 4 decades now we have more of Karnataka influence than Andhra. It's always been the typical Karnataka Style of cooking at home. I remember every Saturday Mom making those hot hot Akki Rottis served with butter and all of us fighting for our turns to relish that.
Akki Rotti is one of the famous Breakfast dish in every household in Karnataka. It’s prepared in different varieties all over Karnataka. I bet each of the variety is totally different taste to experience……..
