Brinjal Fry / Baigan Fry




Try this yummy, tasty & easy to cook/bake Brinjal/Baigan Fry………………………..

Baigan Fry :

Ingredients:
Brinjal/Baigan  : 1 no. (Medium sized)
Chilli Powder : 2-3 tsps
Dhania Powder : 1 tsp
Haldi : ½ tsp
Ginger/Garlic Paste : 1 tsp
Salt to taste
Lemon Juice – 2-3 tsps
Finely chopped Fresh Coriander:  4-5 nos.

Method:

Wash and cut Brinjal to thin round slices(1/4 inch) as shown in the below picture. Soak the cut Brinjals in salted water to avoid de-coloring. 


Take a small bowl, mix all the dry masalas with ginger garlic paste and Lemon juice. Remove the Brinjal slices from water and apply the masala on Brinjal slices and keep it aside. 

Now take a non-stick pan, add very little oil and arrange the Brinjal slices in the pan. Close the pan with a lid and fry the Brinjal until it turns golden brown. Turn the slices to other side and fry for 8-10 mins or until it turns golden brown. You can add little more oil on the slices if you feel it’s too dry. 

Serve this as side dish with hot rice and dal. 

Using Oven: 

Taking baking tray, grease it with butter. Arrange the Brinjal slices in baking tray and brush melted butter on the slices. 

Pre-heat the Oven to 160°C  for 15 mins, place the tray in Owen and bake it for 8-10 mins. Enjoy the yummy baked Brinjal fry.
