Vegetable Dum Biriyani





Biriyani………… you hardly find anyone telling that they don’t like Biryani. We have always heard of Chicken or Mutton Biriyani recipes especially Dum Biryani. Have you tried anytime experimenting the Dum Biriyani with Vegetables. Try this easy, yummy Vegetable Dum Biriyani, I bet all the Biryani lovers will change their mind and opt for Vegetable Dum Biriyani………………………

Vegetable Dum Biriyani :

Ingredients:
Basmathi rice : 2 cups
Chopped vegetables – Beans, Carrot, Peas, Potato, Cauliflower, Capsicum – 2 cups
Chilli Powder : 2-3 tsps
Whole Garam Masala (each) : 3 nos.
Ginger garlic paste: 2 tsps
Finely chopped Coriander/Pudina :  3 tsps
Finely chopped Green Chilies:  2-3 nos.
Sliced Onions : 2 nos.
Chopped Tomato (medium size) : 1 no.   
Saffron :  pinch – (Soak Saffron with 2 tsps of milk or use the Yellow color)
Garam Masala  : 1 tsp
Salt to taste
Oil  : 4-5 tsps

Method:
Blanch the chopped vegetables with salt for 10-12 mins. Drain the water and keep it aside. 

Boil water with salt in a big bowl, add washed Basamti rice to water and bring it to boil. Once the rice is 75% cooked drain the water, this would take 6-7 mins. Keep the rice aside. 

Take a nonstick Handi with lid. Add 2-3 tsps of oil and add whole garam masala, onions, salt, turmeric, ginger garlic paste and green chilies. Saute for 2 minutes, add chopped tomatoes, chopped mint, coriander, chili powder and  garam masala powder. Add the blanched vegetables and mix well so that vegetables are nicely coated with masala. Let this to cook for 4-5 mins on slow flame. 

Add the rice on the top of the Vegetable masala, spread the rice evenly in the Handi. Add 3-4 tsps of oil and saffron on top of the rice. Close the lid and cover the edge of the lid with dough. Cook this on a slow flame for 10-15 mins. Mix the rice and vegetables well and serve hot.
